For the chilli
1 onion, diced; 1 garlic clove, crushed; 1 sweet potato, peeled and cut into chunks; 2 tsp each of chilli powder, cumin seeds and paprika; 1 tbsp chipotle in adobo; 200g mixed colour quinoa; 1 x 400g tin black beans; 800ml vegetable stock; 1 x 400g tin chopped tomatoes For the topping 1 avocado (sliced); 20g coriander; 100g vegan mature cheddar, grated; 50g soured cream; 1 lime, cut into wedges
