FILLET STEAK WITH WHITE BEAN MASH & OLIVE TAPENADE

“This dish would also be lovely with pan-fried or oven-baked fish such as salmon or cod. For a different flavour, you can use basil or coriander in the tapenade.”
INGREDIENTS
• 2 fillet steaks, each weighing approximately 175g/6oz
•A couple of sprays of Fry Light or other oil spray
• Salt and freshly ground black pepper
For the tapenade
• 75g/3oz pitted black and green olives
•A small bunch of fresh flat-leaf parsley
• 1 small clove garlic, minced (optional)
• 1 tbsp capers, drained
• 21/2 tbsp olive oil
• 2 tbsp lemon juice
For the butter bean mash
• 1 tbsp olive oil
• 1 small clove garlic, minced
• 1/2 tsp dried thyme leaves
• 1x 400g tin butter beans, drained
