Seafood risotto

SERVES 4
INGREDIENTS
✱ 1 tbsp olive oil ✱ 1 medium onion, finely chopped ✱ 1 clove garlic, crushed ✱ 1 red pepper, diced ✱ 350g Arborio risotto rice ✱ 100ml dry white wine✱ 1 litre hot vegetable stock ✱ black pepper to taste ✱ 225g pack seafood selection (squid, mussels and prawns) ✱ 125g whole cooked prawns with shells ✱ 10-12 fresh mussels, cleaned in cold water and beards removed (discard any that are not closed) ✱ 1 tbsp chopped fresh parsley ✱ 1 lemon, cut into wedges
METHOD
1 Heat the olive oil in a 26cm frying pan and gently fry the onion, garlic and red pepper for about 5-6 minutes or until soft.
2 Add the rice and cook for 1 minute, stirring continuously. Add the wine and let it bubble, then add the stock, one ladle at a time, ensuring each one is absorbed before adding the next. Stir regularly with a wooden spoon to avoid the mixture sticking to the bottom of the pan.
