MAKE AHEAD
Complete the recipe to the end of step 5 up to 3 days ahead.
• 425g tin pitted cherries, drained (reserve 40ml of the juice)
• 75g caster sugar
• 2 tbsp kirsch (optional)
• 25g cornflour
• Pink food colouring (optional)
• 1.25 litres good quality vanilla ice cream, softened for 15-20 minutes
• 250g shortbread biscuits
• 250g shop-bought madeira cake, crumbled 75g unsalted butter, melted and cooled
