Buffalo cauliflower bites

1 medium cauliflower

75g (2¾oz) flour

115ml (4floz) water

150g (5¼oz) vegan butter

115ml (4floz) hot sauce

½ tsp garlic powder

2 tbsp fresh lemon juice

1 Preheat the oven to 220°C/Gas Mark 7 and line a baking tray with parchment paper.

2 Cut the cauliflower into small florets.

3 Stir together the flour and water in a mixing bowl, then dip the cauliflower in the batter to coat it and place on the baking tray.

4 Place the baking tray in the oven for 20 minutes, turning the cauliflower over once during that time.

5 Meanwhile, heat the butter in a small saucepan over medium heat until it has melted. Stir in the remaining ingredients, reduce the heat to low and simmer.

6 Once the cauliflower is done, combine it with the sauce in a mixing bowl and toss to coat, then return to the oven for another 25 minutes.
