Fully recover from your weekend’s long run with a delicious and nutritious lunch full of veggies, with the perfect balance of macros, vitamins and minerals – and no one will miss the meat!
EASY PEASY ROAST DINNER
Serves 4|| Prep 30mins|| Cooking 100mins
EVERYTHING YOU NEED
• 1 portion Herb Oil ingredients
• 1 portion Roasted Root Vegetables ingredients
• 1 portion Pulled Jackfruit ingredients
• 1 portion Quick Red Wine Gravy ingredients
• 170g shop-bought plant-based stuffing
• Small jar shop-bought apple sauce
1 Make your Herb Oil (see all the recipes below and to the right).
2 Then get your Roasted Root Vegetables in the oven on the top shelf (see right).
3 Make your Pulled Jackfruit and get that in the oven on the middle shelf (see below).
4 Next, prepare your stuffing and put in the oven on the bottom shelf.
5 While they’re all roasting, make your Red Wine Gravy (right).
6 Serve piping hot with the apple sauce on the side.
PULLED JACKFRUIT
• 3x 400g tins young green jackfruit in water or brine
• 5 tbsp Herb Oil or olive oil
• ½ tsp salt
• 1 tsp black pepper
• 1 tsp sugar
• 4 tsp dried sage
• 3 tsp onion powder
• 3 tsp garlic powder
• ½ tsp smoked paprika
• 1 tsp dried parsley
1 Drain the jackfruit, rinse under a cold tap and pat dry with a clean tea towel or kitchen paper.
