Christmas classics with a twist

Turkey en Croûte


✔ 25g butter ✔1 small onion, finely chopped ✔ 3 herby pork sausages, skinned ✔ zest of 1 orange ✔ 2 tbsp dried cranberries ✔ 50g pine nuts ✔ 50g dried apricots, chopped ✔ 3 tbsp chopped fresh sage ✔ 1 egg, beaten ✔ 2 tbsp cranberry sauce ✔ 500g shortcrust pastry ✔ plain flour, to dust

◾ Preheat the oven to 200°C/400ºF/Gas Mark 6. Line a 900g loaf tin with non-stick baking paper, leaving extra paper overhanging the top of the tin.

◾ Heat the butter in a frying pan, add the onion and fry for 5 minutes until softened. Transfer to a large bowl and add the sausage meat, zest, cranberries, pine nuts, apricots and sage. Season with salt and pepper then add half the egg and mix together.
