FROM FOOD TRUCK TO KITCHEN
Food has always loomed large in Manjit Kaur’s life. Having grown up in Leeds, she recalls Punjabi curries bubbling in vats in her dad’s garage during family gatherings. When she started catering forweddings and parties at the end of 2010, it was a passion for food and these childhood memories, rather than any formal training in cookery, that inspired her to start a business feeding others. In the beginning, the operation was driven by Twitter, with no physical base, but soon she graduated to a truck – the natural habitat for her grab-and-go take on vegetarian Punjabi cuisine – and helped launch what she calls the ‘street-food generation’ in Leeds, amassing numerous accolades. Now with a permanent base in Leeds Kirkgate Market, Manjit offers a short menu of traditional thalis, onion bhajis the size of children’s fists, and wraps, including chilli paneer and this pakora version.
