COOL CABBAGE
Vegan-friendly, summer recipe ideas…celebrating the much underrated cabbage
Crunchy Asian Slaw
Serves 4 (as a side dish)
Ingredients
Slaw Ingredients:
• ½ red onion, thinly sliced
• 10-12 radish, thinly sliced
• ¼ of a purple or green cabbage, shredded
• 1 green apple, cut into matchsticks
• 1 carrot, shredded
• 50g (cup) peanuts, chopped
• 1 tbsp sesame seeds
• 10g (¼ cup) coriander, chopped
• 1 r ed chill i, finel y chopped
• Salt and pepper to taste
Dressing Ingredients:
• 1 tbsp sesame oil
• 1 tbsp soy sauce
• 60ml (¼ cup) lemon or lime juice
• 1 tbsp extra virgin olive oil
Method
1. Mix the onion, radish, carrot, cabbage, and apple together in a large mixing bowl.
2. Mix all the dressing ingredients together and toss with the onion, radish, carrot, cabbage, nuts, sesame seeds, coriander and chilli. Add the salt and pepper, give it a final mix and serve.
