THYME AND LEMON INFUSED OLIVE OIL

If you need a homemade Christmas gift in a hurry this oil is quick and easy to make, combines an array of elegant flavours and is beautiful to look at, too. Give as a gift by itself, or as part of a homemade hamper.
• 350ml (1½ cups) olive oil
• 3 sprigs thyme
• Rind from 1 lemon, grated and white pith removed
You’ll also need:
• A suitably-sized sterilised bottle or jar
1 Slightly bruise the lemon rind to release the oils, taking care to ensure no white pith remains (this can make the oil bitter and cause it to spoil) and place into the empty sterilised container.
