HERBY GARLIC STUFFED MUSHROOMS
Serves: 4 as a starter

These crispy bites are delicious served on their own as a canapé or starter, or even as an accompaniment to the main meal. Feel free to use whichever herbs you prefer, but this combination works extremely well.
• 250g chestnut mushrooms, stalks removed
• 2 tbsp dairy-free butter
• 2 cloves garlic, peeled and finely chopped
• 1 small red onion, peeled and finely chopped
• 30g panko breadcrumbs
• 1 tbsp fresh tarragon, chopped
• 1 tsp fresh rosemary, finely chopped
• Sea salt and black pepper, to taste
1 Preheat oven to 180°C/350°F/Gas 4. Melt the butter in a small pan and add the onions with a pinch of salt. Cook for 2 minutes until beginning to soften.
2 Chop the mushroom stalks and add them to the pan, along with the garlic, and gently cook for 3 minutes more.
3 Stir the breadcrumbs, herbs and seasoning into the pan and combine everything well.
