SAVOURY SCONES

These cheesy savoury scones are a fantastic addition to an afternoon tea spread, and make a nice change from their traditional, sweet sisters.
• 50g (¼ cup) dairy-free butter
• 250g (1¾ cup) self-raising flour
• 4 tbsp nutritional yeast
• 1 tsp mustard
• Salt and pepper, to taste
• 135ml (½ cup + 1 tbsp) soya milk
• 10g (⅓ cup) fresh chives, chopped
• 1 tbsp plant-based milk, for glazing
• 25g (scant 1oz) dairy-free cheese, grated
To serve:
• 100g (½ cup) Creamy Sheese with Chives
• Chives, chopped
• Black pepper, to taste
• 1 large tomato, thinly sliced (optional)
1 Preheat the oven to 180°C/350°F/Gas 4. Line a baking tray with greaseproof paper.
2 Add the butter and flour to a bowl, and rub them together until the mix resembles breadcrumbs. Stir in the nutritional yeast, mustard, salt and pepper.
3 Gradually mix in the soya milk, little by little. When it starts to look like a dough, stir in the chives.
4 On a floured surface, roll out the dough to about 1-inch in thickness. Using a 2-inch fluted pastry cutter, cut out six scones and place them on the baking tray.
