Use a hardcrusted, light bread to obtain the best results
French Toast

INGREDIENTS
• 1 loaf of bread (one day old)
• 300ml (10fl oz) soya milk
• 15g (½ oz) vanilla sugar
• 40g (1½oz) caster sugar
• 60ml (2fl oz) aquafaba
• 1 vanilla pod
• vegan butter
METHOD
1 Cut 6 slices of bread; the slices should be around 2cm (1in) thick.
2 Mix the soya milk, two types of sugar and aquafaba in a bowl. Split the vanilla pod lengthways and remove the seeds with a knife. Add the seeds to the liquid and whisk until everything is incorporated.
3 Pour the liquid into a large dish and soak the 6 slices of bread for 5-10 minutes according to the state of the bread (stale to dry).
4 Heat a knob of butter in a frying pan until it becomes frothy. Press the soaked slices of bread lightly to remove the excess liquid — just enough so that they don’t drip when you pick them up.
