• 35g (1¼oz) currants

• 1 small head of caulilower

• 1 small fennel bulb, cored and very thinly sliced, fronds chopped

• ½ a preserved lemon, inely chopped

• 30g (1oz) roasted, salted shelled pistachios, chopped

• 60ml (2 l oz) fresh lemon juice

• 2 tsp maple syrup

• 1¼ tsp laky sea salt, or to taste
