Tropical Sunrise Overnight Oats

INGREDIENTS
For the Oats
• 240ml (6¾floz) unsweetened coconut milk
• 1 ripe banana
• 1 tsp vanilla extract
• 100g (3½oz) rolled oats
• 2 tsp chia seeds
• 80g (2¾oz) diced fresh mango, plus extra for topping
• 42g (1½oz) diced fresh pineapple, plus more for topping
To serve
• 2 tbsp unsweetened shredded coconut
• 1 tbsp raw almonds, sliced
METHOD
1 Place the coconut milk, banana and vanilla in a blender and blend until smooth. In a mixing bowl, mix the oats and chia seeds. Pour the banana mixture into the bowl and stir to combine. Add the mango and pineapple and fold in until evenly mixed.
