175g dried pudding rice
700ml skimmed milk
2 vanilla pods, split in half lengthways
2 tsp vanilla extract
4 level tbsp sweetener
500g fresh blackberries
1 Preheat your oven to 150°C/ fan 130°C/gas 2. Wash the rice in cold water and drain well, then put in a baking dish with the milk and 500ml water. Stir in the vanilla pods and extract, and the sweetener.
2 Bake for 2 hours, or until the rice is tender. Stir through the blackberries to serve and remove the vanilla pods.
