WHAT IS IT?
It’s made from cocoa beans, the seeds of Theobroma cacao. The raw beans (known as cacao) are fermented, dried and roasted, then broken into pieces (nibs). These are ground to a paste, which is made up of cocoa butter and cocoa solids. A large proportion of the butter is extracted, leaving mostly solids, which are ground to a fine powder – cocoa powder. Note that cocoa powder isn’t the same as cacao powder, which is made from unroasted beans.
