“Belly is one of my favourite cuts of pork. In this dish, the meat’s rich fattiness is perfectly ofset by the sweet yet tart lavour of the peaches. It’s a great dish to serve for Sunday lunch, as most of the work is done beforehand – or by the oven. ”

A BIT ABOUT GEORGE
After college, the Devon-born chef moved to London, working with Nuno Mendes, Heston Blumenthal and Jamie Oliver’s Fifteen. Next came a stint at River Cottage, where George climbed the ranks to sous chef. In 2017 he became head chef at Kitty Fisher’s in London’s Mayfair, and he’s now executive chef of both Kitty Fisher’s and sister restaurant Cora Pearl in Covent Garden.
