Boozy rum truffles
MAKES 35-40. HANDS ON TIME 15 MIN, PLUS 1 HOUR CHILLING
This is a good way of using up broken biscuits and perhaps a stale sponge. The truffles are quick to make and require no cooking. Add trimmings of icing or marzipan if you have them left after icing the Christmas cake. Make this recipe in two batches and keep a batch in the fridge until you need them. Keep chilled in the fridge for up to 5 days in an airtight container.
