Cheese, leek & walnut flapjacks
SERVES 9
50g (1¾oz) butter, plus extra for greasing
1 leek, washed, diced
200g (7oz) oats
75g (2¾oz) California Walnuts, roughly chopped
1 large carrot, peeled, grated
2 tbsp mixed seeds
125g (4½oz) vegetarian Cheddar, grated
2 large free-range eggs, beaten salt and freshly ground pepper
1 Preheat the oven to 200°C/Gas Mark 6. Grease and line a 22cm (8½in) square tin.
2 Melt the butter in a frying pan and fry the leek for 3 minutes until softened. Combine with the oats, walnuts, carrot, seeds, Cheddar and eggs. Season with salt and pepper.
3 Press into the tin and bake for 25-30 minutes until golden. Allow to cool slightly before cutting into 9 squares.
