need Electric hand whisk or stand mixer with a paddle attachment; high-sided, 18cm round cake tin, greased and lined with compostable baking paper (see Know-how)
MAKE AHEAD
Store the cake in an airtight container for 3-4 days. Alternatively, wrap well and freeze for up to 3 months. Defrost at room temperature.
