HEALTHY MAKEOVER
Lighter chicken enchiladas

HOW WE DID IT
We replaced the usual soured cream topping with a light, tart béchamel sauce made with fat-free Greek yogurt.
MAKE AHEAD
Stuff and assemble the tortillas a few hours ahead, then cover and chill. When ready to cook, top with the sauces.
