PREP 15 MIN COOK 10 MIN SERVES 4 GLUTEN FREE DAIRY FREE

1tbsp reduced-salt, gluten-free tamari

1tbsp lime juice

1tsp brown sugar

3tsp vegetable oil

500g skinless chicken breast fillets, thinly sliced

2 garlic cloves, crushed

1 long red chilli (deseeded if you prefer it less spicy), thinly sliced, plus extra to serve

Bunch spring onions, shredded

350g broccoli or tenderstem, cut into large bite-size pieces

3 courgettes, cut into ‘noodles’ using a spiralizer or julienne peeler (see tip)

3 carrots, cut into ‘noodles

100g beansprouts, trimmed and blanched

40g roasted unsalted cashew nuts, chopped
