Spicy rice with beans
Though this isn’t a traditional jollof rice recipe, avocado provides a cooling contrast to the chilli, plus vitamin E and monounsaturated fat. It’s also a good source of folate, which guards against anaemia. If you’ve never used scotch bonnet, use half to start – they’re very hot.
