LEMON & HONEY CHICKEN TRAYBAKE

INGREDIENTS
• 3 lemons (juice from 2, remaining 1 sliced)
• 2 garlic cloves, crushed
• 2 tbsp honey
• 2 tbsp olive oil, plus extra for drizzling
• 2 tsp Dijon mustard
• 6 chicken thighs, skin-on, bone-in
• 750g/11/2lb new potatoes, scrubbed and cut into 2cm/¾in slices
• 150g/5oz asparagus spears, woody ends removed
• Salt and pepper
