BLUEBERRY DREAM
Serves: 8–10 people.
For the cake base:
• 120g (1 cup) Brazil nuts
• 85g (½ cup) dates, stones removed
• 2 tbsp coconut oil
• 1 tsp vanilla powder
• 20g (¼ cup) mulberries, coarsely chopped
For the blueberry cream:
• 350g (2⅓ cups) cashew nuts, soaked in water for approx 2 hours
