Beetroot and Lentils

I always set out for the local greengrocer, aiming to buy some veg thinking I’ll be really healthy that week. So, I buy loads of vegetables that just sit in the fridge. [My husband] Neil [Borthwick] will despair and end up turning these forgotten vegetables into gorgeous salads. For this recipe we like to use puy lentils, but any lentils work. Roasting the beetroot with the herbs, sugar, salt and vinegar almost pickles it as it cooks.
