Celeriac Truffle Soup

INGREDIENTS
• 2 tbsp olive oil
• small bunch of thyme
• 2 bay leaves
• 2 small onions, chopped
• 1 large garlic clove, chopped
• 1 celeriac, peeled and chopped
• 1 large potato, chopped
• 1L (34floz) vegan vegetable stock
• 100ml (3¼floz) soya cream
• 50g (1¾oz) blanched hazelnuts, toasted and roughly chopped
• 1 tbsp truffle oil, plus an extra drizzle to serve
METHOD
1 In a large saucepan, heat the oil over a low heat.

3 Cook for about 10 minutess until softened.
4 Stir in the garlic and cook for 1 minute more, then tip in the celeriac and potato. Give everything a good stir and season with a big pinch of salt and white pepper.
5 Pour in the stock, bring to the boil, then simmer for around 20 minutes or until the vegetables are soft.
6 Discard the herbs, then stir through the cream, remove from the heat and blitz until smooth. Drizzle with truffle oil and scatter with hazelnuts.
Orange Roast Potatoes

INGREDIENTS
• 2kg (70½oz) King Edward potatoes
• 2 oranges
• 1 big bunch of fresh sage
• 1 small bunch of rosemary
• 8 garlic cloves
• 6 tbsp olive oil
METHOD
1 Preheat the oven to 220ºC/ Gas Mark 7.
2 Peel and chop the potatoes into large chunks, roughly the size of a golf ball.
3 Parboil the potatoes in a pan of boiling, salted water for 10 minutes, then drain in a colander, shaking it to chuff up the edges. Leave to cool for 5 minutes until fluffy.
4 Meanwhile, peel long strips of peel from the oranges using a peeler, and pick the sage leaves.
5 Place a good helping of oil into a large roasting tray on the hob over a low heat, add the unpeeled garlic, rosemary, orange peel and sage leaves, then fry for 30 seconds.
6 Add the potatoes and toss together until well coated. Then place into the oven for 45 minutes or until golden and crisp.
