There’s a healthy reason why this South American favourite has taken the UK by storm



Compared to other nations, we Brits have only recently embraced the sweet potato – but we have made up for lost time. According to retail fifigures, Waitrose is selling six times as many of the orange spud as it was in 2010, while M&S reported a sales increase of 76 per cent in the past year alone.

The word is out. And thanks to in flfluential chefs, we’re finding innovative uses for them aside from traditional spudbased dishes, like wedges and mash – think Yotam Ottolenghi’s sweet potato pancakes or the taquitos served at Wahaca.
