Balsamic cherry tarte tatin
This sultry-looking tarte tatin recipe uses the syrup from the canned cherries with a splash of good-quality balsamic vinegar. It helps to cut through the sweetness of the reduced syrup and adds a little bite. Serve with whipped cream or vanilla ice cream on the side.
SERVES 8
425g (15oz) can cherries in syrup
50g (1¾oz) caster/granulated sugar
50g (1¾oz) butter 1 vanilla pod 1 tsp balsamic vinegar
200g (7oz) ready-made puff pastry whipped cream or vanilla ice cream, to serve
1 Preheat the oven to 220°C/Gas Mark 7. You will need a 28cm (11in) ovenproof frying pan.
