Luckily, my mother cooked vegetables so marvellously (braised leeks, mmmm… cauliflower cheese, woof woof… stuffed peppers, hellooooo) that I genuinely prefer them to almost anything else on the plate. Five portions a day are easy when I’m at home, but less so when I’m on the move. Why don’t more fast food joints offer vegetable soup? Easy to eat and better for you than a pie.
