Hugh’s turkey curry
SERVES 6-8. HANDS-ON TIME 25 MIN, SIMMERING TIME 30-40 MIN
To my mind, the lull between Christmas and New Year loses some of its savour if it isn’t fuelled at least in part by bowls of fragrant curry made from meaty leftovers. If turkey isn’t your thing, you can, of course, make this recipe using chicken, lamb or beef.
MAKE AHEAD
The curry paste will keep chilled, in a sealed container, for up to 2 weeks. Freeze for up to 3 months.
