CRISPY CHICK’N PARMIGIANA

Crispy breaded, succulent seitan fillets topped with rich tomato sauce and oozing non-dairy cheese make for a delicious cheat day meal everyone will love. Serve with a mixed salad dressed simply with a balsamic glaze to balance the richness.
For the seitan:
• 250g (2 ¼ cups) vital wheat gluten flour
• 3 tbsp nutritional yeast
• 1 tsp onion powder
• 2 tsp garlic powder
• 2 tsp sea salt flakes
• 1 tsp black pepper
• 1 tsp dried Italian herbs
• 350ml (1 ½ cups) vegetable stock, cold
• 3 tbsp olive oil
For the simmering broth:
• 1 onion, skin on, roughly chopped
• 600ml (2 ½ cups) vegetable stock
• 2 cloves garlic, squashed with the back of a knife
For the tomato sauce:
• 1 tbsp olive oil
• 1 large onion, peeled and finely chopped
• 4 cloves garlic, peeled and finely chopped
