Mexican Corn Salad

This simple corn salad has similar flavours to Mexican street corn and makes a great side dish to serve with tacos or burritos.
• 1 tbsp olive oil
• 1 garlic clove, pureed
• 30g (1oz) jalapeños, chopped
• 1 tsp smoked paprika
• ½ tsp ground cumin
• 300g (10.5oz) frozen sweetcorn
• 1 red onion, finely diced
• 1 red pepper, chopped
• 1 bunch spring onions, chopped
• 200g (7oz) cherry tomatoes, halved
• 3 tbsp soya yoghurt
• 2 tbsp lime juice
• Handful coriander, chopped
1 Heat the oil in a frying pan over a medium heat, then add the garlic, jalapeños, smoked paprika and cumin and fry for 1-2 minutes. Then, add the sweetcorn and cook for a further 3-4 minutes and allow to cool.
