Israeli couscous, traditionally known as Ptitim is a small pasta which was created when rice was scarce in Israel in the 50s. The grain has a nutty flavour and is a great alternative to traditional couscous.
• 1 tbsp olive oil
• 1 tbsp za’atar
• 3 carrots, cut into batons
• 150g (5oz) Israeli couscous, cooked as per packet instructions
• 1 tbsp lemon juice
