COVER RECIPE, ORANGE GINGERBREAD CAKE

For the sponges:
• 550g (5 cups) self raising flour, sifted
• 550g (2 cups) non-dairy butter
• 550g (2 cups) caster sugar
• Egg replacer, made up to 8 eggs worth of mixture, according to pack instructions
• 2 tsp baking powder
• 1 large pinch sea salt
• 2 tsp vanilla bean paste
• 3 tsp ground ginger
• 2 tsp ground mixed spice
• 100ml (scant cup) non-dairy milk
• 2 unwaxed oranges, zest only (save the juice for the frosting)
You will also need:
• 4x 20cm (8in) sandwich tins
• Greaseproof parchment paper
• 2 tbsp non-dairy butter, for greasing
For the frosting:
• 850g (4 cups) icing sugar, sifted
