Baked miso cod with udon noodles

Breakfast

Eggs & spinach on toast: Whisk eggs in a microwaveable bowl and stir in lots of shredded baby spinach. Microwave on high for 45 seconds, stir and cook for a further 30-45 seconds until the eggs are done to your liking. Load onto 2 toasted slices of wholemeal bread from a small 400g loaf (a Healthy Extra)
