8 ripe medium bananas, each peeled and sliced into 3
150g ready-made low-fat custard
150g fat-free natural yogurt, mixed with vanilla extract to taste
40g dark chocolate, broken into pieces
1 Line a baking tray with baking paper. Take 12 lollipop sticks and skewer 2 banana pieces onto each. Spread out on the tray in a single layer, cover with cling film and freeze for 3-4 hours.
2 Whisk together the custard and yogurt. Discard the cling film, divide the custard mixture over the frozen bananas and return to the freezer, uncovered, for 2-3 hours, or until set.
3 Just before serving, melt the chocolate in a heatproof bowl over a pan of gently simmering water, ensuring the bowl doesn’t touch the water (or melt it in the microwave on low for 30 seconds). Drizzle evenly over each banana pop and serve immediately
