What we’re eating now
We don’t often feature the humble spud in healthy – usually tending to include sweet potatoes in our recipe pages instead. However, we Brits have a soft spot for them – a recent poll* reveals they’re our favourite ingredient. Cheap, filling and non-processed, they’ve got some sterling health benefits, too – they’re a source of fibre, potassium and folate, and have higher amounts of resistant starch than the sweet variety, which aids digestion and reduces insulin sensitivity. So make like Ella Woodward, aka Deliciously Ella, who’s joined the ‘Potatoes: More Than A Bit On The Side’ campaign and incorporate her Coronation potatoes recipe as part of a balanced diet:
