Beetroot is an incredibly versatile food, going way beyond being just a pickle! You can roast it, blend it for a healthy juice, pop it into a salad, add to your vegan burger, or even make a beetroot and chocolate cake! Beetroot traditionally was used for medicinal purposes and as a dye. Typically, in the Middle Ages it was used to aid digestion and blood illnesses as a laxative by the Romans, while the Victorians used beetroot to add colour to their diet and to bring sweetness to desserts. Today, beetroot is used to add colour to many foods such as sauces and jams.’
