Warm Comfort for Frosty Winter Days

"I learned to ski from a young age and I’ve been lucky enough to spend many happy holidays in the mountainous regions of Europe and beyond. I confess to being besotted with the way of life there – but more than anything I love the food. These are places for enjoying long schnapps-filled lunches and relaxed, laid-back dinners with friends and family, as the snow falls quietly around and time ceases to matter. It’s that real, honest food, the winter fare of snowy Alpine regions, that these recipes celebrate. It’s hearty food for cold days, full of flavour and warmth. I hope you’re inspired to cook these wonderful dishes in your own kitchen. "





"Although simple in its ingredients, this classic Austrian dish tastes rich and indulgent (its name means ‘emperor’s mess’). A deep, fluffy pancake is filled with boozesoaked raisins, shredded, then dusted in icing sugar and served with a tart fruit compote. Although this is really a sweet dessert, in the Austrian Alps it’s often eaten as lunch."

Kaiserschmarrn – it may not look elegant but it tastes wunderbar and fills you up

• 100g raisins

• 60ml schnapps, kirsch or rum

• 250g plain flour

• 6 medium free-range eggs, separated

• 3 tbsp caster sugar

• 1 tsp vanilla extract

• Finely grated zest 1 lemon

• 350-400ml whole milk

• 50g unsalted butter

• Icing sugar to dust

• Plum or raspberry compote to serve

1 Put the raisins into a small pan with the schnapps/kirsch/rum and heat gently. Take off the heat and set aside for at least 15 minutes to allow the raisins to soften and plump up.
