I would like to write fiction, but every time I buy a notebook to write down my astute observations of human nature I end up with lists of bloody dish ideas instead. Sometimes if I can’t get to sleep at night it will be because I am thinking: will rhubarb go with rosemary? Flavours are always in my head. What I come up with is neither subtle nor sophisticated. I like big flavours. I am not Raymond Blanc. But I think about food and flavours all the time.
