
Quinoa salad: grains are a key feature of the vegan diet
VEGAN diets that exclude animal products are often criticised as being too restrictive for athletes and have been linked in some studies to compromised carbohydrate digestion and reduced absorption of glucose.
Yet a trial published in the Journal of the International Society of Sports Nutrition found that a well-planned vegan diet provided adequate energy and nutrients, elicited positive metabolic adaptations of skeletal muscle, and didn’t compromise gastrointestinal functions when combined with endurance training.
