PART TEN: How to create perfect vegan icing
Whether you’re a seasoned cupcake decorating pro or a complete novice when it comes to buttercream, making your homemade sponges and cupcakes that look professional and impressive doesn’t have to be as hard as you think.
Typically, many traditional varieties of icing contain animal products. However, it is possible to create delicious ‘creamy’ icing using alternative vegan-friendly ingredients.
VEGAN BUTTERCREAM ICING
Due to its versatility when it comes to colouring and flavouring, buttercream is a popular choice for cake decoration.
• 225g (1 cup) room temperature vegan butter/margarine
• 375g (3 cups) icing sugar
• 1-2 tsp non-dairy milk of your choice
• ¾ tsp pure vanilla extract
1 Using a mixer or by hand, whip the margarine or butter until fluffy.
2 Slowly add in the icing sugar until it’s combined well.
3 Add in the vanilla.
