Basic omelette

THE BASIC OMELETTE

Use our foolproof method and add your favourite filling

PREP 2 MIN COOK 5 MIN SERVES 1

VEGETARIAN GLUTEN FREE

Spray sunflower oil

2 eggs

2tbsp skimmed milk or water

A few sprigs fresh flatleaf parsley, to serve (optional)

1 Spray a frying pan with oil and set over a medium-high heat. In a bowl, lightly beat the eggs and milk or water together with some freshly ground black pepper.

2 Pour the egg mixture into the pan. Swirl the pan to coat the base. Cook for 1–2 min to set briefly, then use a spatula to pull the mixture away from the edges of the pan and tilt the pan to let uncooked egg flow into the space. Do this until the egg is just cooked through.
