STEAMED BAO BUNS

Steamed buns are a typical Asian dish. While they would traditionally be filled with meat, this vegan version opts for a deliciously savoury and well-spiced mushroom filling. For the bun dough:
• 300g (2½ cups) plain flour
• 4 tsp sugar
• ½ tsp fine sea salt
• 2 tsp instant active yeast
• 240ml (1 cup) soya milk, warmed
• 1 tbsp vegetable oil
For the bun filling:
• 2 tbsp vegetable oil, for frying
• 1 onion, finely diced
• 400g (5 ⅓ cups) mushrooms
• 100g (¾ cup) bamboo shoots, finely chopped
