850g (1lb 14oz) white potatoes, chopped into cubes and boiled

3 tbsp olive oil

2 garlic cloves, crushed

1 red onion, finely diced

1 tsp paprika

2 pinches of chilli flakes

1 squeeze of fresh lime

a handful of chopped coriander
