HOUMOUS PASTA

This pasta dish is so easy to make and is deliciously satisfying. It’s surprisingly nutritious, too, thanks to the spinach, peas and protein-rich chickpeas.
• 200g (7oz) gluten-free spaghetti or linguine
• Olive oil, for drizzling
For the houmous sauce:
• 2 tbsp olive oil
• 1 red onion, sliced
• 2 cloves garlic, chopped
• 200g (7oz) raw spinach
• 150g (1 cup) peas (fresh or frozen)
• 240ml (1 cup) houmous
• ½ lemon, juice only
• 80ml (⅓ cup) reserved pasta water
To serve:
• Handful pine nuts, toasted
• 1 lemon, zest only
• Bunch fresh chives, chopped
