INDIAN FAKEAWAY FEAST
CAULIFLOWER AND CHICKPEA TIKKA MASALA

This tikka masala is a rich and creamy dish that can be served with rice or simply just an Indian bread. It will warm your insides and inspire you to make more homemade takeaway classics.
For the tikka masala cauliflower:
• 1 medium head of cauliflower, chopped into florets
• 2 tsp oil
• 1 tsp lemon juice
• ½ tsp ground cumin
• ½ tsp ground coriander
• ½ tsp garam masala
• ½ tsp smoked paprika
• ½ tsp garlic powder
• Salt, to taste
• 400g (14oz) tin chickpeas, drained
For the tikka masala sauce:
• 2 tbsp dairy-free butter
• 1 large onion, finely diced
• 1½ tbsp garlic, minced
• 1 tbsp ginger, grated
• 1½ tsp garam masala
• 1½ tsp ground cumin
• 1 tsp turmeric powder
• 1 tsp ground coriander
• 400g (14oz) tin tomato sauce or passata
• 1 tsp chilli powder
• 1 tsp sea salt
• 300ml (1¼ cups) tinned coconut milk
• 1 tbsp sugar
• 2 tbsp tomato purée
To serve:
• Fresh coriander leaves
• Cooked rice
1 Preheat the oven to 200°C/400°F/ Gas 6. Add the chopped cauliflower florets to a large bowl, drizzle over the oil and lemon juice, and mix well to coat. In a small bowl, mix together all the spices and salt. Sprinkle the spices over the cauliflower and toss to coat. Spread the florets on a parchmentlined baking sheet or dish and bake for 25 minutes.
2 Whilst the cauliflower is cooking, melt the butter in a medium saucepan and fry the onion until soft and fragrant.
