Plant-based eating literally changed my life…
WHEN AND WHY DID YOU TURN VEGAN?
I started eating plant-based about four years ago. I have always been keen on veggies – even as a child I preferred roast dinners to just be a plate of vegetables and gravy – and I was just curious about how to use real ingredients.
While at university, I went through a rocky time with my mental health. I lost someone very close to me due to mental illness, which, in turn, made me become very unwell myself. I suffered with depression and eating disorders for a long time. As horrible as this was, the experience taught me an important lesson, of how crucial food is for our overall wellbeing.
So, when I finally turned a corner with my health, and became aware of the damage I had done to both my mind and body, I wanted to do the very best I could for myself – for me, that meant going vegan.
